Dad's Original Gnocchetti Sardi
Gnocchetti di Sardegna Demiurgo
with extra garlic and chili, parsley and goat cheese.
INGREDIENTS:
- A glass of «Bongiovi «Dad’s Original Sauce»
- 2-3 portions of Gnocchetti Sardi
- 2 shallots
- 1 celery stalk
- 1-2 cloves of garlic
- 1 Half hot chili pepper
- 2 tbsp tomato paste
- 150 ml red wine
- 1/2 bunch of parsley
- Goat cream cheese
- Parmesan
- A few sprigs of basil
PREPARATION:
Cook the gnocchetti Sardi in salted water until al dente. Cut the shallots into cubes and fry them in a pan with olive oil until translucent. Chop the garlic cloves and chili pepper and add them.
Pour in tomato paste and “Dad's Original” sauce. Cook for 2-3 minutes. Add halved celery stalks. Deglaze with red wine. Continue to simmer on a low heat until reduced by half. Then add 100ml pasta water and season with pepper (no salt, as the cheese will add a little salt later).
Mix the finished gnocchetti in a pan with chopped parsley.
Arrange the finished dish with goat's cream cheese flakes, parmesan and finely chopped basil on the plates and drizzle a little olive oil over it.
